A Fall Staple: Banana Bread Bites


Fall is finally here! The chilly weather has us all trying to wear our autumn clothing and baking some our favorite dishes. One of the reasons I wanted to create this blog as a means to share recipes for some of my favorite dishes! So, for the first post I want to share a family recipe for Banana Bread Bites. Banana Bread Bites are essentially banana bread cookies and they are absolutely to die for. That may seem like an exaggeration, but this is probably one of my favorite recipes. I don't remember where my mother and I originally found the recipe but it has been written down on a small note card for years. If you enjoy baking, these are the perfect cookies to share with friends and show off your baking skills. Folks are always thoroughly impressed when I make these cookies for them, so I can't wait for you all to try them out!

Things you will need:

a big bowl

cookie sheet

whisk/electric mixer

Recipe:

1 cup of sugar

1 stick of butter

2 eggs

3 ripe bananas (dang near black)

1 tsp of vanilla abstract

2 cups of all-purpose flour

1 tsp of baking soda

1/4 tsp of salt

1 cup of semi-sweet chocolate chips

Optional:

1/2 cup of chopped walnuts

Once you've got all the right ingredients, your first step will be to pre-heat the oven to 350 degrees and spray your cookie sheet (unless you fancy and it's non stick). Next, in a large bowl mix the sugar and butter. After you've got that all mixed together add your two eggs. Make sure that you beat them eggs nicely. The third step will be to finally add in the bananas and vanilla extract. You can use an electric mixer to break down the bananas, but if you like to get your hands dirty, you can try smashing the bananas with your hands (which is my personal favorite). Now you have to sift in your flour, baking soda and salt. Finally, you can add your chocolate chips. The cookies should bake for 12-15 minutes or until they are a light golden color.

Pro-tip: Use a regular spoon to even out the dough of each cookie. Less can be more with his recipe.
